These little, individual soufflé-style casseroles are totally customizable to suit everyone's taste.
Whisk together eggs and your choice of milk until fluffy, then toss in your choice of add-ins: halved cherry tomatoes, diced bell peppers, fresh chopped spinach, sliced mushrooms, cooked crumbled bacon, or shredded cheese. There are so many possibilities!

Like many of you, our festivities were filled with a lot of indulgences. Now, it's time to get back on track. I find when I get off my normal routine, the best way to regain control is to start with breakfast. It sets the stage for the entire day. By starting the day with a hearty breakfast – one that has a lot of protein, veggies, and healthy fat – keeps me feeling full and satisfied longer. It also helps me make fewer "snack trips" to the kitchen before lunchtime.
I hope Santa gifted you an air fryer for Christmas. I love mine. It has become a permanent fixture on my kitchen counter. There are so many more things you can use it for besides the obvious chicken wings and fries. Try making grilled cheese, bacon, donuts, or even apple pie! (Source).
However, these super easy individual egg casseroles are one of my favorite things to make.
To get started, spray a 6-inch ramekin with nonstick cooking spray, then set aside. Next preheat the air fryer to 325 degrees and set the cooking time to 15 minutes. In a small bowl, whisk together 2 eggs with 2 tablespoons of milk (I used almond milk). Whisk until fluffy and well combined. Next, add your choice of add-ins. I used 2 tablespoons of shredded dairy-free cheese, 1/4 cup of fresh chopped spinach, and a pinch of salt and pepper to taste. Pour the mixture into the ramekin. Top with 4 small cherry tomatoes that have been cut in half.
Once the preheat has ended, add the prepared egg dish to the heated air fryer. Be sure to keep a close eye on it as cooking times will vary.
After the time has elapsed, remove the casserole from the oven and allow to cool for 5 to 10 minutes before serving. Top with ripe avocado slices and a sprinkle of Everything But the Bagel seasoning, if desired.

Everything But the Bagel seasoning, for serving
How to make
